Egg Drop Curry

Serves 4-5


Ingredients
⁃ 2 Onions, sliced fine
⁃ 1 tsp Ginger
⁃ 1 tsp Garlic
⁃ 3 tsp Bottle Masala
⁃ 1 Medium sized Tomato
⁃ 1 400ml can of Coconut milk
⁃ 7 eggs
⁃ salt to taste
⁃ water to adjust

Steps
1. fry onions only translucent, brown and soft
2. add garlic and ginger and fry till the rawness leaves
3. add bottle masala, fry until fragrant
4. add tomato, stir to combine and fry
5. add 2 cups of water, simmer and let thicken
6. add coconut milk and let simmer
7. Add Salt as needed
8. while simmering, crack eggs and gently drop into the curry one at a time.
10. Enjoy!

Option: Eggs can be pre boiled, shell removed, slice each in half and drop in the curry
